Brown rice provides a quality source of fiber as well as a great source of other nutrients and phytonutrients. Brown rice is lightly processed (removing only the outermost layer—the hull), allowing it to retain high levels of Vitamin B3, B1, B6, manganese, and phosphorus.
Studies have shown that brown rice contains “bound” antioxidants that are released by intestinal bacteria, as opposed to antioxidants in fruit which are considered “free” and quickly absorbed into the blood stream. Science has also shown the phytonutrients found in brown rice protect against heart disease and cancer.
